    I saw Aarti talking about this recipe on The Best Thing I Ever Ate. I also read all of the reviews ahead of time. Unfortunately, my coconut toffee was a crumbly mess. I followed the recipe exactly (even added the ground cashews and used a candy thermometer. The taste of my crumbly mess is good but I certainly can't serve it at the dinner party I am attending. I will stick with Giada and Ina; their recipes are always foolproof!

    Don't know what went wrong but it didn't set up at all, made sure it was at 235 degrees but still didn't set.

    My biggest suggestion for those struggling with this recipe is to watch the episode of "The Best Thing I Ever Made - Stocking Stuffers." Aarti mentions some ingredients not listed here. For instance she uses 1 Tbsp of unsalted ground cashew and a pinch of salt when putting the coconut in. She also uses 1/4 tsp of cardamom. Hope this helps

    Tasty did not set carefull measurement and a new candy thermometer
    carefully cooled and a pan of sweetened light pink flakey coconut. What a mess. Cant use it for????

    This is amazing and EASY! I saw Aarti make this recipe on "the best thing I ever made"- xmas episode. When she measures her water- she uses a DRY measuring cup (1/2 cup I don't know if this makes a difference, but I have done it this way BOTH times I've made it and it comes out PERFECT. Also it takes just a few minutes to set, cut and eat, especially if you put it directly into the freezer after pressing into the pan. I don't know why the recipe on here says it takes a few hours- Aarti even say that it just takes a few minutes to set in the episode.

    I really wanted this to work. Seems like others have had the same problem I had - ending up with pink sweet coconut. I'd love for someone to give some suggestions of where we shredded coconuters went wrong. I'd love to try again but not sure what to do differently. I added less coconut as other reviewers suggested.

    I've made this recipe several times now and it always turns out great. Big wow when servered to guests. I don't know if there is a typo in the recipe, but I always have to add 2 1/2 cups of coconut to get the right consistency. I also don't find it too sweet for a piece of candy. Those of you who thought it way too sweet might want to check & make sure you didn't pick up sweetened coconut by mistake. Just in the last couple of weeks have my supermarkets started to carry the unsweetened coconut.

    I made this with sweetened coconut, used less sugar and substituted cardamom for coriander (my favorite spice it was delicious! Love you Aarti!

    I made this recipe for a Valentine's Day party. BUT my store didn't have unsweetened coconut - - so I used sweetened. I love sugar, I love coconut, and I love Aarti. But this recipe with the sweetened coconut was waaaaay too sweet to take more than the tiniest bite. And I tried. (made a face every time. But I'm giving it five stars because I'M the one that screwed it up. It was super quick and easy to make, turned out perfect (cut out a tiny bit of coconut per previous reviews, and the cardamom ROCKED. I may try this again if i can get my hands on some unsweetened coconut. We ended up throwing the whole dang batch out. :( Broke my heart.
