    I only had sweetened coconut, but this was a really tasty recipe!!! I made this for a group and everyone loved it and kept coming back for more. I want to make it again and try it with the unsweetened coconut.

    Thank you meganewin_12787397 for your review!! Wish I would have read that before I started! My 1st attempt was a total bust, way to dry and just ended up with shredded sweetend pink coconut! Cut the coconut down to 1 & 1/2 cups and added 1/2 teaspoon of cardamon! Came out perfect! Will make again!!!

    I had to make it twice but I think I figured it out. I used about 1 1/2 cup coconut so that the texture was glossy but not too soupie and I had about 1/2 tsp of the cardamom. That set much better than the full 2 cups coconut which turned out grainy and fell apart - still tasty but not something you can server to guests. I would make it again!

    Followed the recipe exactly. Used unsweetened desiccated coconut and a candy thermometer. The mixture was just way too dry, so it was a crumbly mess. Need less coconut or more water mixture?? Also, it just ended up tasting like sweetened coconut. I couldn't taste the pinch of cardamom either. Won't make again, sorry Aarti.

    Being South Asian like Aarti, I can shed some light on why the recipe is called coconut 'toffee'.

    The word 'toffee' is used in some other parts of the world to describe sweets or candy. Just like cookies are called biscuits in the UK and other places.

    Wonderfully yummy candy! I really can't explain this yummy texture but I really like it and loved the fact it isn't too hard on my teeth. We are big coconut fans and just love the flavor, esp. the cardomon! Thank you for another great treat! Oh-I loved the color! So pretty on a plate! Go Aarti!!

    I used dried durrian not cocconut. The mixxutre was mush. Can you tell hat was wrong, Miss Aarti? Your number one fan, Pik Pik.
