I have made coconut burfe/halva before. THe recipe is there in all Indian cookbooks.
I liked the way she described the sugar ball time in water. However, theories apart and onto the real deal - the ratio of sugar to coconut is very high in Aarti's recipe. As a result, the toffee or whatever name Aarti has for this, falls apart very easily or becomes rock solid.

The recipes do not seem to be tested properly.

I got an email forward asking to review Aarti's recipes. Not sure who originated the email thread!
I tried this recipe as it seemed easy. However, the result was a fiasco. I used fresh coconut shreds. Maybe that's why. Can you explain, Aarti?

The toffee did not set, but just got shredded or crumbled.
Also on Aarti's show, it looked more like bufri - an Indian sweet. Is that what it is? If so, why is Aarti calling it toffee?
The recipe has clearly not been tried several times, by the chef.

We had troubles making this 3 times now - use dessicated raw coconut and it seems to not make the ball stage and just crumbles. Should we use regular sweetened coconut or is the recipe correct as written?

I tried to make this Coconut Toffee 3 times now. The first 2 times is came out too hard and fell apart when you bit into it. The third time I used more water & sugar to make the coconut bubbly like Aarti did on her show. It hardened before I could get into the 8X8 pan. Results: hard candy nothing chewy & crunchy or pretty like on the show.

Firstly, this is more like fudge and not a toffee.
The sugar content was too much. My indian friend made a variation of this where she used milk powder and less sugar. The result was a fudgy, candylike texture that did not kill the taste buds.

i am a big coconut lover, but i thought this would be too sweet for me and it isn't. It is just devine and its so pretty and pink: It is easy to make and reall looks unsual and different.. I served this at a dinner party, with after dinner drinks, and chocolates. I put the pink toffee on black square plates and they looked really striking in our modern home decor..

I love this dish and I am not a fan of coconut. It is so easy to make and tastes wonderful. I see this recipe being widely used for holidays! I am so glad Aarti won and has her own show, I can't wait for more recipes. I love Indian food and she makes it seem easy and fun. You rock Aarti!
