    YUM! I am a big fan of loaded mashed potatos. BUT, I just recently went primal,,,so potatos off the menu. I made this recipe and it was quick andflavorful. I am allowed to eat bacon on the Primal menu so I added my homemade bacon bits. I am going to try replacing the milk with butter next time and see if it tightens them up a bit.

    Immersion blender is the key here. The roasted garlic is terrific in this recipe. I just put 4 large bulbs of garlic in tinfoil and put them in the oven for about 25 minutes. The flavor is exciting, especially when you realize this is only cauliflower without any butter or oil. I did not have sharp cheddar cheese on hand so I used regular cheddar and it was still great. I think it would be even tastier with sharp cheddar! Cauliflower is one of the few vegetables low in oxalates to prevent kidney stones, so I will surely make this again. The texture is very much like potatoes. I agree with another person that it took much longer to cook than 8-10 minutes to completely soften.

    The flavor in these was great! They were a little on the runny side, so next time I would drain the chicken broth before blending. Also, I only had a hand mixer, so this complicated blending them a bit. Mine were a little chunky which was ok because I like my mashed potatoes chunky. This is a great low carb alternative to potatoes!

    This is super tasty and much more flavor than mashed potatoes. Even if you don't like cauliflower at least give it a try, I think you'll be pleasantly surprised! Just make sure you have the right equipment to blend.

    I used Parmesan cheese because that was all I had, but it still turned out yummy. Next time I will try the cheddar. Would definitely make again.

    I have made this recipe twice so far, and both times have been a HUGE success. I like mine really creamy, so instead of using a hand masher, I put it in the blender, and then after is smooth, put it back in the pan to thicken with the cheese. I think I like these even better than real mashed potatoes!

    This is uncommonly delicious, not at all what you would think, more like mashed potatoes only healthier. Hurrah for the Neelys I love this with their chopped sirloin, it's made a beliver out of me...old and new things together for a great dinner!

    I was a little hesitant in making this but everyone loved it and was looking for seconds....unfortunately, the bowl was empty. I just made this the other night and the family is already asking me when I am making it again. Good one, Pat and Gina.

    Awesome recipe. I made it once for my son, daughter-in-law and grandson and my husband. Everyone loved it - my son even wants me to make it for his annual skeet shoot/ barbeque. My husband was telling me what he wanted for dinner last week and got very upset because we had no cauliflower (we live in the country - I wanted the cauliflower also - I just didn't want to drive 30 miles for it! So now I try to keep cauliflower on hand! The chopped steak and mushroom was fantastic also.
