Delicious! And what's best is that it's easy peasy! The fish sauce is salty and delicious--it makes the dish do don't skimp on it. It's in the Vietnamese section! Next time I'll add bamboo shoots and try and marinate the chicken beforehand. Another tip: it's just as good with steamed rice (rather than noodles.

Very delicious and easy to make. I made it exactly as written, but subbing light coconut milk for regular and red curry paste for green. It took me a while to prep - a lot of thin slicing...but someone with better knife skills could power through it. Once it's prepped it comes together very quickly. Even my 4 year old loved it. I served it with Trader Joe's Shrimp Gyoza and Gyoza dipping sauce. Yum.

Very easy, very quick. I followed the recipe exactly except adding a swirl of sarrachi at the end. I may substitute fish for the chicken next time. Not too spicy, great flavor.

This is a great recipe! So simple and very delicious. I substituted the green with red curry paste and it turned out great. We will be making this one over and over again!

A wonderful variety of complimentary flavors. I've made it about 4 times in 3 months and everyone loves it! I added a jalapeno the last time to give it a little kick and it was great. If you only make one soup this is the one :

I just tried this tonight and it was /wonderful/. It makes a lot of soup, but the three of us were fighting for the last of it in one sitting. I substituted half light coconut milk and it was still incredibly thick and creamy. I'd never cooked rice noodles (which packages I saw called rice sticks, but all the same before, but they are a lot easier than any other noodle I've used. Definitely going to be holding on to this recipe, it was super easy to put together and really quick for such a hearty soup.

Restaurant quality recipe. I had green curry powder not paste. After some internet Q & A decided I could substitute. It is good quality curry powder.
A favorite Thai restaurant has a dish that adds cubed potatoes and cashews in it. I added the potatoes to the onion saute part. I added the cashews with the cilantro. Recipe is perfect as written but I like to add to most recipes. If you like it spicy you could add a red Thai chili pepper or a jalapeño.

Quick, easy and delicious. We make a lot of different thai foods, and my boyfriend has spent a lot of time in Thailand, he thought it was great and loves fish sauce and he added extra, the recipe, as is, was perfect for me tho.

Absolutely delicious. This is now a regular recipe in our house. I've never worked with curry paste and this recipe is a great first try. Tastes very gourmet yet comforting. Yum!

I really enjoyed this recipe, it was easy to make and very tasty - flavors are different from the norm (for me and I really liked that. I'll definitely make this dish again.
