I love peanut butter and jelly and these taste just like that without the bread. The only thing I tweaked was rolling the dough in small/fine crushed peanuts instead of sugar. I made a few without the nuts. I prefer the cookies with the peanuts.

These are amazing. We made our first batch with no jelly just to try them. They are so light and fluffy and yummy! Not at all like the much denser Peanut butter cookie. I will make these again and again.

I was SO excited when I saw this recipe because, well, to put it lightly, I’m a peanut butter FREAK; so much so, that I don’t allow myself to buy it because inevitably half of it will be gone in 20 minutes, and I’m left feeling really bad about myself. But enough of me and my problems. This recipe reminded me of childhood and the carefree days of eating peanut butter and jelly sandwiches, and that is one of the things I love most about cooking/baking. Some smells and tastes just bring you right back to a certain time of your life. There was nothing unique about these cookies, and in this case, I think that is what makes them so good. They showcase simple, delicious flavors and that is all that these cookies need to shine. I will for sure keep this recipe and recommend anyone to try it. But, next time I’m adding more peanut butter :
