This recipe is a keeper. They are easy to make and taste like my grandmother use to make. Yum yum.

I grew up eating latkes. My mother made them the same way. They are delicious. When my husband and I go to France and stay with his mother she makes them for us and adds ground beef and Swiss cheese. She makes a quick spaghetti sauce with ground beef which goes very well but they couldn't believe it when I used sour cream on them (creame fraiche like regular latkes. Delicious!!!! I also sprinkle vitamin c on them to keep them turning grey.

This recipe is a total keeper, and so easy, that I might not even need to refer to the recipe again. I learned a couple things from this recipe, after having lots of failures with other potato pancakes that those other recipes don't tell you, such as the importance of the cold water which keeps the potatoes from turning gray, mixing with the shredded onions then pressing out all the water and starch which also kept the potatoes from turning gray, reserving the starch, and the real key to crispness, "thin is in". My wife and I were both blown away by how tasty this turned out - and using her homemade applesauce didn't hurt, either. :D
The one thing I didn't do, because I don't have one, was use a cast iron skillet. I just used a good-quality large saute pan, not nonstick, that transfers heat real well, and kept the heat medium-high. Crispy, golden, and awesome! Thanks, Duff, for sharing. I'll never go back to any of the others. Yum!

Very good recipe. I added a little thyme to make them like the ones I remember my friend, Fritz, making when I was in the Army in Germany. It gives them a little extra "oomph."

I haven't tasted Duff's recipe, I don't have to. His recipe is like mine. Most Latke recipes, by cooks and chefs shred the potates, making them more like hashbrowns with some seasoning. This is the best way for latkes, you have to grate the potatoes and onions. Good work Duff for following the traditional route for latkes!!!

Potato pancakes are common food in my old country. I make them without onion and with garlic and marjoram.

Awesome. Our new Saturday morning breakfast tradition. Follow the directions to the letter, no alterations necessary. Make sure to smash 'em thin in the pan so they get nice and crispy! I like to alternate between topping with applesauce and sour cream. Thanks Duff!
