This was & will be one of my fav. After reading other review's, It was good to know others had the same prob. with the green beans not being tender. When I try these new recipes, the rule of thumb is to follow it to the tee. After that I can modify or sub. ingredients to our liking. We will make again just steam green beans before hand. Great job Ellie, keep up the good work!

This soup is delicious!!! Hearty, flavorful, filling, lo-cal. I used cannelini beans and an Italian seasoning in place of the dried herbs. Plus I broiled a whole wheat bruschetta rubbed with olive oil and garlic on top for dipping. Yummy. Also check out Ina Garten's winter minestrone. Even better.

I really love Ellie's recipes. I feel good after making them, knowing that it is going to be good and good for me. This minestrone soup is no different. I made it almost exactly as written, but used vegetable broth instead of chicken broth. Partly because I already had it on hand. Turned out great. Grazie Ellie!

Perfection! I saw this recipe in Better Homes and Gardens Magazine from a year ago. Only difference was instead of green beans, it had zucchini and instead of kidney beans it had cannellini beans. I've made it this way twice (using ditalini pasta instead of elbow macaroni and it's fabulous. I added some baby spinach at the end for myself (hubby doesn't like it but loved the soup. This is an outstanding, easy to make and customize to your liking recipe. Most of the items I have in the pantry already. It was great on cold winter night and I can freeze the leftovers. Thanks Ellie, this is one of my favorite soups.

Very tasty, a new favorite! A perfect mix of spices, really enjoyed this soup. Added pasta and a little mozerella cheese. This will be a regular!

Made this recipe at the Firehouse with a side saucepan of sweet Italian sausage for the meat eaters and it was a hit! Served with a baguette and salad dressed with Olive Garden Iltalian. Bravo from Unified Fire Station 122!

Delicious! Added italian turkey sausage, browned it with the onion mixture. Used 2 carrots, steamed the green beans prior to adding to the pot, and 2 zuccini, 1 yellow squash. Also 2 cans cannellini beans rather than kidney bean, 5 cups chicken broth. Simmered 30 mins and then let it rest for another hour. The flavors were fantastic. Served over al dente pasta. Next time will have some crusty bread. Hubby wants this every week!
