My wife of 32 yrs. came in the door and said! What ever you are cooking smells great. We both said that the recipe is a keeper. I'm learning to cook, my wife is great cook. For a guy looking to surprise his wife, this is a great start.

We recently bought a Bertolli Frozen Soup for Dinner Minestrone. It was pretty good. When I saw this, I thought I'd try it. As I gathered up the ingredients, I decided to make some to freeze. I used 4 cans of chicken stock, 12 oz bag of frozen steamer green beans, 2 cans of red kidney beans, 3 carrots, 3 celery stalks, 42 oz diced tomatoes, 1 onion, 2 small zuchinni, 1 1/2 t ea. dried oregano and dried basil, 3 t garlic powder, T dried sweet red peppers, 1 1/2 lbs of Italian sausage crumbled and browned. All into the soup pot for 4 hours. Made rotini for two just before serving. Topped with parmesan. Had 8 servings to freeze and am I glad, it was great soup.

This was delicious and very healthy! I followed the recipe pretty much to the tee EXCEPT for adding 2 small zucchini, a can of cannelini beans in addition to the kidney beans, and about 2-3 cups extra of chicken broth. I really like to freeze my leftovers, so I cooked the pasta separately and added it into each bowl of soup. This prevents the noodles from getting soggy during reheating. I would highly recommend this recipe!

Delicious and easy to make. I doubled the recipe and added yellow and green squash at the end. Cooked the macaroni separate and added it the dish when serving. I will diffidently make this dish again.

I did not care for this soup as much as I thought I was going to. Overall, it was okay. I thought it was very bland and definitely needed some more beans!

I made this last night for dinner -- it was delicious! I added an extra cube of chicken bouillon (and I think I would add an extra can of kidney beans next time. The broth had a fresh tomato flavor and everyone loved it. My mother-in-law asked if she could have the leftovers.

My wife and I make this all of the time. I would suggest cutting the called for pasta in half so that it does not absorb the entire soup.
