I read all the ratings and comments and then made these with 1 extra Tbsp of butter ,about 1/2 tsp of extra thyme leaves, added the full 4 oz grated parmesan, 2 Tbsp cold water, 1 Tbsp. cold cream, some lemon zest and a squeeze of lemon jc.. I baked them for about 15 min., let them cool a short time and then put them in my toaster oven on the rack and let them further dry out at about 325 degrees for about 8 min. The results were golden in color and very crispy and flavorful. Got many requests for the recipe and "how did you do this?". I will certainly make them again for those good comments from people.

Hello again. I did bake off these crackers late last night, and they were actually very tasty. I did, however, cut them into 1/4 inch rounds rather than they 3/8 inch as directed. I found the thicker slice was too thick and I did not get a crispy cracker-which I like. The bake time was approximately 12 minutes. In order to get the crispy cracker, cooling them completely is a must. They went well with a glass of ginger beer. Nice recipe, Ina. RE Scruggs Buffalo, NY

I have been watching Ina building and talking about these crackers for ever... so I finally decided to do them, rather than serving up store bought crackers to serve with wine....OH MY GOSH! They are every bit as good as she says they are.... Amazing!!
I know i will be making these over and over!

Thanks so much for this easy and VERY good recipe Ina!!

I made these this morning for a party tonight. They are a tiny bit dry, which makes them perfect cocktail fare! I did not read the reviews prior to making them and added about 4 TBSP of cold cream (I doubled the recipe to bring them together. Wonderful and I will make these again.

I have made these for a few years now, and they are always delicious and well received. DO remember the tip about adding ice cold water if the dough doesn't come together (1 tsp at a time. I give them as gifts in food baskets as well, at least all those I don't eat.

For starters I have made MANY Ina recipes. Ina's "stilton and walnut" crackers were easy and wonderful so I thought these were a no brainer. The ingredients were extremely dry and crumbly, even after adding one TBSP of water. I purchased pre-measured parmesan and did not verify the cup measurement, perhaps more cheese would have add more moisture. Unfortunately, I had to throw out the ingredients :-(.
