This was easier than I expected and so yummy. The pork turned out tender and moist, something that's hard to do with pork. I didn't have cloves or a vanilla bean, I just put in vanilla extract and it turned out perfectly delicious!

AMAZINGLY Delicious! ~ Even my 10 year old loved it! This pork dish is full of flavor and gives the taste buds something new to explore. I was worried about the potency of vanilla, but it's perfectly subtle and is the perfect balance to the peppercorn. I was in love with the way the pork tasted by itself and it was just an added delight with the apples, celery root, and broth. It was worth the cost of the vanilla beans! THANK YOU! If I could hug you ~ I would! That is how much I loved this dish!

This was the star of our Christmas dinner-wonderful flavor. I loved the vanilla hint to it as well as the apples and celery root. I am making sandwiches today with both the pork slices and the apple sauce.

I made this recipe yesterday and it is fantastic! The flavors are bold and the roast was very tender and juicy. I will make this again and again, no question.

Honestly, the best roast I have EVER made. It had just a hint of the vanilla, cinnamon and cloves, and it was amazingly juicy. The celery root and apples were absolutely a perfect pairing with this roast and the easy sauce that gets whipped up at the end was just slightly sweet with complex, delicious flavors. I got rave reviews that night from all who came to our house for dinner. Brine needs to be taken care of the night before. Everything was easy and straightforward.
