    Made for dinner tonight. Taste delicious, but looks nothing like the picture. The picture looks like a slice of cheese is just under the tortilla chips.

    I was skeptical, but this was pretty good. I made some modifications though. I didn't want to use swiss cheese, so I looked for the laughing cow chipotle cheese, but couldn't find it, so I used the Philadelphia santa fe cooking cream cheese instead. I also don't like beans, so I substituted jalapenos. I also used the chips as a breading instead of a topping. My oven took a little longer to cook than suggested (~20 minutes longer. I topped with sour cream and lettuce and it turned out really good. Serve with sangria and you are all set!

    Full of flavor and the crunchy corn chip topping really finished it off. My husband had no idea it was low calorie and said he'd like me to make it again. The only down side is some of the refried bean stuffing oozes out while cooking, but there was still plenty left inside (I scooped up what oozed out and distributed evenly under each serving. Will definitely make this one again!
