Perfect and delicious- don't leave out the lemon! Spears cooked to exactly the right tenderness. Rock star appetizer and easy to slim down for just two or three people.

Tasty for sure. I have no problem with the ingredients, it is the content. Four zucchini are too many for this procedure. After you flour, dip, coat so many pieces of zucchini or anything else, the breadcrumbs get sloppy and you really have to start all over with a fresh coating if you want adherence. If you are using expensive parmigianno reggiano in the coating, you end up throwing the clumpy useless mix away and wasting a lot of cheese. I dust a large plate with the grated cheese and roll the hot pieces in the parmigianno, then serve with lemon or home made ranch dressing. BUT you can only do so many pieces until you have to refresh the crumbs. Also, I mixed a couple of tablespoons of cornstarch with 1/2 cup flour.

Dredging in flour then coating in egg wash just was not working for me...so I just did egg wash and bread crumb mixture...I add more grated cheese than the recipe and added celery salt to it. When I was done with the frying, I added sea salt...very delicious!

Yummy. Easy to make. I used smoked paprika instead. Gave it more flavor. Will make again
