This is absolutely delicious. It has a nice heat but not too spicy. Think I used a little less rich dairy and it turned out great. The only problem is it gets better the next day And not so great for the waistline! Make this. It really is a winner!

Made this last night - I read the reviews and ended up using 2 cups of half and half and 1 and 1/2 cups of 2% milk. It came out great! It was so delicious and had just the right amount of heat from the curry paste. My husband who usually doesn't like anything spicy at all had three helpings! Loved it!

Tried this last night having read the reviews i did reduce the cream by 1/2 a cup my family loved it, it will become a regular part of are weekly menu can'nt wait to make again will add either chicken or ham next time to make a complete meal, i also added 6oz's of the curry not 4 to give a bit more flavour

I love Mac n' Cheese, it's one of my all time comfort foods. My husband, alas, has not shared my passion - until this recipe came along. I first had it at a friend's house and my husband wanted to take the whole pan home with him! It's a keeper!

I did like this recipe; however, I would change a few things based on the suggestions here. First, I would use a bit less milk as the sauce is a bit loose. In order to thicken it up, I just baked it in the oven @ 350 for about 15-20 minutes while I was preparing the rest of the meal. It worked like a charm. I used Thai brand red curry paste and it was not at all too spicy. It had a nice heat to it. My only disappointment is the lack of a rich, cheesy flavor. Next time I will use a stronger cheddar and probably omit the jack cheese.
Overall, I like the recipe and as for some comments about cheese - in my opinion you can never have too much cheese for mac & cheese. It's the cheese that makes it!
Thank you Aarti for a great recipe. It's the first one I've made from your collection here and I will definitely be making many more.

This dish was really delicious--the Thai curry paste adds a nice warmth to the macaroni and cheese. When I made it, I used part skim cheddar cheese and part skim monterey jack cheese and only used 4 ounces of each and found it to be cheesy enough for me!

I hate mac n cheese, BUT I love this version. My neice and nephews were visiting and they wanted me to make mac n cheese out of the box. So I decided to see if I could make something delicious and healthier so I looked to Aarti for that. She is amazing and this recipe is so easy to make and truly tasty. The kids loved it and especially the 6 year old who is extremely picky said "Omg I love it", so I know it's kid friendly if he likes it.

I love this mac and cheese. I couldn't find the paste but I found the thai red curry sauce. Yum. Love it love it love it. Next time i will double the amount of curry. The taste was really subtle.
