I made this recipe this morning for breakfast & we liked it very much. The only negative thing my husband & son had to say about it was they didn't like the cilantro in it. I plan on fixing it again this time without the cilantro. We had the Candied Bacon & some Naan-style flatbread with it.

Wonderful! Aarti, you always seem to have a great way to simplify yet intensify the recipes you create/share. The omelet was superb...I only changed one thing...I added shallots instead of onions, and I did saute them slightly before adding into the eggs. The spices were simple yet complex and really did add a new dimension to the 'omelet' we're used to. Keep 'em coming!! Love your blog!!

I scaled this omelet down to one serving and kicked it up by blooming some cumin seed in the pan before adding the egg mixture. The fantastic brown sugar bacon and naan completed the meal. Eggscellent!
