Understandably, this recipe is designed for families but I was able to cook a single breast easily and it was wonderful! I would recommend tenderizing the meat before and I used about double the curry powder since I like my curry with a kick. Success!

This is wonderful! My 11 year old son loves frozen, breaded chicken breasts. I am trying to introduce variety and new flavors into his diet and get him to eat healthier foods, so I decided to give this recipe a try. To my utter surprise, he LOVED it. I was a little afraid of scaring him off with too much curry, so I only added it to the egg batter, and left it out of the bread crumbs. There was still a good curry flavor, however. His comments were that it had really good flavor, was light and much less salty than the frozen variety and he would like to have it again tomorrow. Success!!! P.S. His mom loved it too.

Instead of Dijon Mustard I just used the regular mustard I don't know if it makes a difference, but it came out really good. This recipe is a keeper especially if your trying to cut out some calories! Very good chicken finger!

My comment is not for the recipe, which I will try tonight. I am so happy to see that someone at food network wrote out how many calories, grams of fat, etc. This is the first I have seen from any of the chefs. It sure does help and I would like to see more chefs use this info for those of us who are watching carbs and fats. . Good job Food Network Magazine!!! Thanks!!!

I really liked the flavor of the mustard/curry coating, and the crunch of the panko made the chicken very tasty. I didn't care for the ketchup dipping sauce (my personal taste - hubby liked it a lot, so I used ranch dip. Next time I will try a spicy mayo or mustard-based dip.

Wanted something quick and easy to try last night and I found this recipe. It was great. It took very little time to make, the ingredients are inexpensive and easy enough to find, and it tasted wonderful.

I will never fry chicken fingers again! These were awesome!!! I used Italian bread crumbs instead of Panko. I made a smoky ketchup (ketchup, chipotle, smoked paprika for a dip, along with honey mustard and spicy mayonnaise.
