    Beans + rice = great combination! Thanks to the other reviews, I pre-cooked the black-eyed peas in accordance with the instructions on the package; they came out perfect. This dish is good, but only without the kale. (I used kale because I do not like collards. After we sampled the dish, my husband wouldn't eat it, and I had a hard time getting it down as well. We spent an hour picking out all the kale, then I mixed the beans with the rice, then refrigerated it. I reheated it the next day, and it was pretty good. I might make it again, but only without the greens. (By the way, I used home-made chicken stock, which seasoned it beautifully.

    First off, I should address the issue with the black-eyed peas. I became suspicious of the recipe saying to cook the peas for 15 min when the package said to cook them for 40-45 min, so I checked the reviews to see if this was a problem for anyone else (which it was. I only have two burners and I already had the rice cooking, so I microwaved the peas in water, covered, for about 8 min. The peas were fully cooked by the end (though I did cook the whole thing at least an extra 5 min. The gumbo came out surprisingly good for a vegetarian version! I also sprinkled a little Parmesan cheese on top, which added a nice flavor, and served it with brown rice. Delicious! Just be sure to read the package for the cooking time of the black-eyed peas!

    I agree with novembernightstar about the frozen beans being too hard. I enjoyed the dish. It is tasty and it didn't taste anything like gumbo, which is fine for me since I'm not a big fan. I added an extra cup of broth and continued to simmer until both the kale and beans softened to my liking. I will make it again and add the soyrizo as someone else suggested. I would suggest either using your own homemade beans or buying them canned. I had homemade black beans at home but wanted to follow the recipe as called for.

    I really, really wanted to like this. I made it because I bought beautiful organic rainbow chard and wanted to use it while it was nice and fresh. Unfortunately, when I added the black-eyed peas and the chard, it took so long to cook the peas (and by the time I finally called it quits, they still were too hard for my taste, the chard was way overcooked. I followed the recipe, using frozen black-eyed peas, but next time (if I make it again, I will use canned and add the chard waaaaay later. I didn't finish an entire bowl and the garbage disposal got the rest.

    Very nice! Couldn't find black-eyed peas up here in New England so used pinto beans instead. It was very filling and not hard to make at all. Look forward to leftovers tomorrow night.

    This was easy and delicious! My husband who is a meat eater really enjoyed it too...and it's better the next day! We also added some veggie chorizo style sausage - yum!

    This recipe is sooo good! It "tastes green" according to my three-year-old says, but it's really good if you like vegetables. My three-year-old did not like it, so he go boxed mac and cheese instead. Oh well. I still give this recipe five stars. Next time I think I might add some shredded chicken and shrimp. This was way easy to make and it's definitely going on my weeknight menu. One of these days I hope my little one will come around and enjoy this meal with us.

    When I first saw this recipe, I didn't think it would be as tasty as it actually is. I was pleasantly surprised. Ingredients are something I usually stock in my fridge so I can make this on any day. And steps are so easy and cooks so fast that this is truly for week nights! Next time, I might add spicy sausage or something but the recipe is excellent as is!

    I just finished this recipe. It's easy...I had everything in the fridge. It's hearty, yummy and NO GUILT. I doubled the recipe so I have A LOT to share with my friends. Thank you for making healthy food look and taste delicious!
