This was ridiculously easy and delicious. I couldn't eat it fast enough. The taste is light and refreshing. I will continue to make this whenever I want to impress a crowd.

Seriously, the best EVER! Absolute comfort. I made the homemade ricotta and then used Ciabatta bread for the bruschettas and toasted in a cast iron pan. I also put a few tbsp of plain ricotta to the side and served topped with orange marmalade. My head is spinning with topping ideas... carmalized praline bacon, fig preserves, apricot preserves, how bout alittle mediteranian flavor with kalamata olives and sun dried tomatoes, toasted walnuts in a brown sugar or honey syrup and on and on and on. YUM ME!!!!

This was really tasty and easy to make. Although the homemade ricotta tasted more like a spread, than ricotta but delicious anyway!!

So delicious!! The blend of the herbs with the creaminess of the ricotta on a slice of warm toasted garlic bread is incredible. Since I'm not a fan of dill, I chopped basil instead and added the zest of a lemon to add some brightness to the mixture and everyone went for seconds and thirds!

Very tasty, however, I could not get my sauce to thicken enough....I'm guessing that was my mistake, so I'll still say this recipe was very good.

I gave this recipe 5 stars for the homemade ricotta alone!! AMAZING! And super easy! I never thought making fresh cheeses would be this simple and incredible. I can't wait to make more recipes with this ricotta.
