Horrible. It was very thick. Could have been used as a side dish maybe. However, my dogs loved it mixed with their dry food!

Excellent soup and well worth your extra time to roast the vegetables to get some carmelized flavor. Substitutions work well. I've tried butternut squash or turnips. My store didn't have celery root, so I used 5 stalks of celery. I'm a health nut, so instead of the grilled cheese sandwiches I added some cooked quinoa for protein. (although I'm sure the grilled cheese croutons would have been wonderful. Instead of pureeing the soup in the food processor I found the immersion blender worked well (easier for me. If you have kids, however, the grilled cheese is probably a great selling point!

I loved this soup, although I used what I had on hand. Zuchinni, carrots, red bell peppers, onion, and 2 heads roasted garlic (roasted separately. Grilled cheese great too, next time I will try rolling the bread thin first, just to make them smaller like croutons.

Fantastic, even the kids love this soup. I've tried it also by adding a small butternut squash to this and it's super yummy. Also I use Tillimoke Extra Sharp Cheddar....

This is a very interesting, healthy and delicious soup - the grilled cheese croutons are perfect with it so don't leave them out! The honey is also a nice touch. Mine was very thick and I added some half and half to it, which made it a little more velvety.

Really flavorful. Just think a soup that looks like a cream soup with no points! Made me using vegitables I had never used before. The roasting really did the trick. Anything with roasted garlic is great but this was very good. Ate it without the cheese croutons. Crackers would have completed this dish.
