Great soup, especially on a cold day. Having dinner ready after a busy day was wonderful. I'll certainly make again!

I made this for dinner on a very very cold winter day. I love slow cooker recipes and this soup held up beautifully. I tossed it all in and let it go, ten hours later I came home to find no mushy beans or veggies. I did toss in ~ 1 cup of white wine (it was sitting in the fridge and needed to be used up and when I tasted it, I felt the broth needed a little extra kick, so I added a packet of veggie stock concentrate (low sodium. I think I would use chicken or veggie stock instead of all water next time. Topped it off with grated cheese and a drizzle of white truffle oil. It is worth making again.
