    This was surprisingly rich considering that the recipe didn't call for a ton of ingredients. Roasting the tomatoes did take some time, but it's not like it was labor intensive, and it was well worth the wait. While the soup was pretty flavorful, I did feel that something was missing. I found myself adding a lot of salt at the end, but there was still something lacking that I can't quite put my finger on. Overall, still a great soup and I will make it again.

    Sure this recipe was easy, but it took way too long for a pot of tomato soup. It was yummy, but not amazing. I didn't care for the texture, but I didn't strain it, which may have improved the texture. I think I'll stick to opening a can of Progresso tomato basil for my tomato soup fix.

    Very very easy and so flavorful! We will roast tomatoes this way from now on!! We did add a little red pepper flake for a bit of heat as well 2 tablespoons of Sofrito (tomato paste with peppers, garlic and onions to round out the flavor profile. We used a hand blender and did not need to strain. So tasty and filling!!

    This was a hit! I felt like I had to add a lot of salt at the end, so next time, I will salt the tomatoes more before roasting them. This soup was super easy...I still need to hunt down some Herbes de Provence, I ended up using basil, rosemary and oregano. I used my handblender and the texture turned out great! YUM YUM!

    This was fantastic! I only roasted my veggies for 45 mins. and that was plenty. I did not use Herbs de Provence b/c I don't have them, but I just kept seasoning until it was where I wanted. My husband and I like spicy, so I added red pepper flakes, dried oregano and ground black pepper. I also added 1/4 c. of white wine which I thought was great. Sunny Anderson has a recipe similar and she starts with 1 can of tomato paste and 2T EVOO in pot before adding roasted veggies. I added fresh basil just before serving. It was yummy.

    Fantastic! I use two (2 cans of fire roasted tomatoes (Hunt's or Muir Glen instead of doing my own roasting ... and it's still delicious. I tuck in the immersion blender but only do it a wee bit -- we like our soup chunky. My favorite tomato soup recipe ever!
