I made a lot of small changes based on what I had on hand but it still came out great...so is a good base recipe to play with too. I needed to use up the pots of beefsteak tomatoes I had at the end of the season from my garden so I used small beefsteak tomatoes. I didn't have herb de provence/used good poultry seasoning blend instead. Had green onions and not regular onions on hand so used a 1/2 cup of green onions. And finally I cooked the tomatoes faster...just put em in the oven on 350 for one hour...no turning or anything....just oiled/salt/pepper and roasted cut side down for 1 hour on 350 and they were done...no muss no fuss.

I don't like or eat tomato soup because most recipes are too sweet. I decided to try this one and was deliciously surprised. Contrary to some who may not have liked the texture, I found it to be appealing. This is a rustic soup with sophisticated flavors.

I liked it, but my husband and son wouldn't touch it. Maybe it was the texture, which takes a little getting used to. I didn't strain it through a sieve so maybe that was the problem. At first I thought the seasoning was a little strong too, but after a couple of bowls, I adjusted to that too. I guess I would make it again but with the understanding I will have to eat it all by myself.

This was super easy to make. Next time I make it I'll double the recipe; I made it for the 2 boys in my family (one is only 3 and when I got home later in the evening there weren't any leftovers.

I love tomato soup. I travel for business and have tried tomato soup, especially tomato basil soup all over the country. Made this recipe this weekend and Wow! it is my favorite tomato soup ever. I substitued italian seasonings for the herbs de provence but otherwise followed the recipe. It is worth the time spent.

This was absolutely the best thing I have ever made. I used 8 roma tomatoes and it made 4 very small portions. I think the next time I will use about 20 tomatoes to make sure I have left overs. My husband said he would have paid $20 for a bowl of this soup in a restaurant.
