First time seeing his show today, Meatloaf looked yummy. Adding the grits a new thing for me.
Made it tonight. Grated the onion instead of chopping (my preference for any meatloaf, and used chiili sauce instead of ketchup. Left out the chicken broth, felt it was to soupy already (good thing I did. Did set up nice in baking and came out well as a meatloaf product should. Did leave it bake for 20 more mins. Good thing I used a more narrow pan and parchment to bake it in, would have not held its shape. I liked how the grits in it set up nice.
The taste was as I expected it, it to be from the ingredients, good.

This recipe instantly caught my eye. I love using turkey in place of beef because its lower in fat, and my boyfriend loves meatloaf. We are always the kind of people to change things up a bit and make a recipe our own. I used a more traditional Italian style bread crumb and omitted the grits and milk, and I'm not a huge fan of feta so I used ricotta instead for the filling but this was an amazing treat so full of flavor and will definitely go in my book of favorites. Thanks so much

Great recipe...Tasty! Tasty! Tasty!
I could not find red jalapenos in the store. Which made me think later about all the variations you could do with the filling, for instance.. sun dried tomatoes would be a great option, or possibly adding bacon, or another using mozzarella cheese or even incorporating some sauteed garlic in there. Just some ideas. Let me know if anyone tries any of these. I'll check back later for any responses.

i loved this recipe i am tryig to use healthier options for dinner and this was great my kids love spinach and love this better than the traditional meatloaf recipe i told them there was peppers and feta and it was turkey instead of beef they were surprised. big daddy you rock i will continue to watch your show hope you have a cookbook coming out soon.

I made this for a Valentine's Day brunch for 4 very special couples and they absolutely loved it. Made it again last Sunday and it was better the second time around. The only change I made was the topping, I did not have tomato sauce so I drained a jar of wihte corn and black bean salsa. Man was it kickin! Thank you Big Daddy!

This meatloaf is so good!!! I love the Feta and spinach! I loved that it wasn't expensive to make a lot of stuff I already had in my pantry. It was so none traditional and so delicious! I will be making this again and again! I too would probably put a little less chicken stock because mines was a little less loafy.... Thanks

I made this the other night for my Moroccan husband and he loved it! Yum Yum Yum! The spinach and feta stuffing is truly unique and delish! Not your ordinary meatloaf and I was just so surprised how moist and tender the ground turkey came out using grits. I will definitely be making this again, Thanks Big Daddy!
