    I WAS TOTALLY SHOCKED AT HOW TASTY THIS SOUP WAS. I ONLY USED 1 CAN OF BEANS AND COULD HAVE ONLY USED 2 CUPS OF CHICKEN BROTH B/C I DIDN'T WANT TO MAKE TOO MUCH. I WAS GENEROUS WITH THE CRUSHED RED PEPPER WHICH ADDED A LITTLE KICK. SIMPLY DELICIOUS AND WILL DEFINATELY MAKE THIS AGAIN.

    Really great after I made a few additions. I added chicken sausage in the beginning before adding the beans etc. Instead of the Parmesan while cooking, I added a piece of the Parmesan rind while it simmered. Through in a couple of thyme sprigs and bay leaves. Simmered for at least an hour then topped with grated Parmesan. Super easy and really delicious! (Also, added finely sliced basil to finish.

    I made this soup for me & my husband tonight, who isn't really a soup guy.. But it sounded really good to me, so I rolled the dice... : He LOVED it! I added some white onion when I sautéed the garlic and added some Italian seasoning, garlic powder and a touch of salt & pepper. Next time, I will wait to add the parm cheese until the end. It got a little gooey. Overall- delicious! Will make again soon.

    The only change I made was that I used vegetable broth instead of chicken broth. The whole family enjoyed it and it made a great meatless meal with a loaf of French bread & a salad. I'll definitely make it again.

    Great soup! I diced some Spanish chorizo, browned it in the pan and cooked the vegetables in the oil that rendered. I decreased the celery
    to 1/2 cup, added 1/2 cup of chopped onion, and omitted the olives. I will
    make it again.

    Simple, quick and really tasty! I used all chicken broth, sun-dried tomatoes instead of roasted red peppers and no olives (tried a few... didn't seem to fit well with the other ingredients. I had black eyed peas and pinto beans available, but they worked perfectly given their creamy texture and rich buttery flavor.

    my family loved it. I boiled some chicken and used that chcken both and pulled the chicken off the bone and added. My may try chick pea next time

    I read the reviews on this and decided to try this recipe. It is DELISH!! I modified it a bit....I cooked up some sweet turkey sausage separately and added it to the soup when it was time to add the celery. I also added some orzo after the celery was almost tender and then finished off with the red peppers.
    I will be making this more often!!

    My family loves the soup! For you meat lovers, I've added ground turkey, which I've cooked in a separate pan with basil and oregano. Adding fresh spinach leaves along with the kalamata olives and roasted red peppers has also been a big hit.
