I don't understand how the poster below shelled out $40 for a few ingredients, this recipe is simple, easy and a winner. If you follow the directions and allow the discs to firm up in the freezer, etc. it will come out perfect every time. I felt like I should have made the discs smaller because the fresh bread crumb w/ walnuts is so yummy and the goat cheese makes it so rich. Hubby thought I should have made more discs, the same size.... I have made this several ways, I am good w/ the dressing included, but one of my staples is 1/3 cup each olive oil and quality basalmic vinegar w/ a scant 1/4 cup maple syrup, minced garlic, salt, pepper, and fresh thyme - not heated. Tonight my hubby is trying his go at it w/ garden greens and smoked salmon.

I give this recipe only two stars because it was only a half decent meal that cost 40 bucks to make. The smell of the chopped chives, parsley and fresh bread crumbs is amazing at first, but that's where it ended for us. I added three tablespoons of the sherry vinegar and it was extremely too sour and made the greens undesirable to eat. Making the goat cheese discs were not as easy as it looked on TV. They fell apart a bunch of times and the bread crumbs were not that crispy after being fried. I cant put my finger on it, but it needed something else. Maybe a sweet citrus addition to the vinaigrette? More spices to the goat cheese? Anne you are still the best.

OMG!!!! Now I understand why Anne does a little happy dance when she tastes her food! These were absolutely amazing. My kids loved them, I loved them, I am craving more now! In the episode where she makes these, she stresses the importance of prepping your ingredients beforehand. I didn't do that, so the prep work seemed to take a long time. It was totally worth it. Anne, come cook for me!! The only thing I would different is make these on a day where I am alone, so I don't have to share! So good!

I was lucky to catch the episode where Anne makes this salad today Luckily I had goat cheese and a package of European lettuce mix so I decided to try it. It was delicious! My husband said it would be great to serve to company! Very tasty and satisfying.

There is flexibility in this recipe, but the flavor is always still there. I have made this too many times to provide a number. I always use store bought bread crumbs and have used white wine and red wine vinegar. They are what I have a lot of. I have used spring mix salad already prepared.

Getting the goat cheese to cooperate is always tricky. The last time, I made them into balls instead of disks and they were easier to keep from breaking. Despite my variations, the flavor is still there and the presentation great.

How many times does every guest around the table ask for a recipe for something you've prepared...even the guys? It's one of the BEST goat cheese preps ever. Perfect, delicious, high pay off salad. I make everything ahead of time. Have everyone sit down, pour the wine and in that amount of time fry up the goat cheese, dress the lettuce mix (I do an easy Spring green mix without wilting and present to the table. Did nine discs in 5 minutes Some suggestions: I pop the breaded discs into the freezer a good 1/2 hour before putting in the oil.REALLY pack the goat cheese disc with breading...press it in over and over - all around the sides too.Get the oil good and HOT. This will allow you to cook them up in less than 4 minutes...literally two minutes per side.Have all the salads on the plates, dressed and ready to receive the discs. Can't believe this has only 13 ratings. It's one of the best recipes I've made and I get many ideas from food network. Anne Burell rocks!

This is the best salad I've ever tasted. Hubby & daughter thought so
too! Please take the time to do the cheese element because it makes the salad. Will definitely make it again and again. Thanks Anne for
    another fab recipe.
