This is a good, simple meal to prepare on a weeknight! For those of you wanting to give it a little more jazz, season the meat with chipotle seasoning and chili powder. I get a little agressive on the seasoning side, but I have learned to give the meat that extra kick in order to get over the blandness and turn this into a good, easy meal!

The beef filling definitely needed something added to it. Tomato paste and chili powder didn't really add much flavor, and the sauce seemed a bit dry. I think some finely sliced cabbage and maybe a little pickled red onion would really pack a punch to this dish. Overall as it was, it was just ok, not something I would probably make again.

Very easy for a weeknight meal; good leftovers too. I made the tostadas and I think it added something extra to have warm shells. I found the meat a bit bland so I added some more chili powder, a shake of Tony Chachere's, and some taco sauce to the top for extra zing-- but adjust to your taste as you go. Add a salad and some fruit and you have a good, simple, quick meal to add to the work night arsenal.
