I took the advice of another reviewer and used a 1/4 cup of vegetable shortening in the frosting. I also used 1/2 tbsp. of champagne extract plus 2 tbsp. of water (instead of the strawberry daiquiri mix in the frosting to make the cookies "strawberry and champagne" flavor in honor of Valentine's Day. They are very sweet but they are small so a little goes a long way. My friends loved these, and they shipped nicely. I will be keeping this recipe for Valentine's Days to come :-

Be warned, these cookies are SWEET but I made them for a baby shower recently and everyone gobbled them up. Many people asked me for the recipe and I was a little embarrassed to admit the cookies came from a mix but they are delish and will absolutely make them again.

Surprisingly yummy. I added pink food coloring to make the cookies really pop. The stawberry mix really makes it tasty. The icing was too loose though to keep the cookies together, so i added vegetable shortening, and additional powedered sugar until it was a thick frosting like consistancy. the cookies shipped really well to my friends around the country and they were a hit!
