    This is my new favorite go-to dish! It's hearty withough being heavy, versatile, and a good slate for improvising with some different add-ins, depending on your whim & pantry. The recipe is as easy as advertised, though you do need to pay attention to it throughout cooking to make sure couscous doesn't burn & toasts well.

    Excellent. The fried couscous was a really nice surprise. I'm not sure I'll cook regular couscous again after having it fried!

    My Gosh! I'm eating this salad right now and it is DELICIOUS! I love the crunch and the dressing with the cheeses and other ingredients are a terrific blend. Thanks Giada! I know have a new way to prepare couscous.

    YUMMY !!! Did not use chicken broth, just boiled water and added a bit of unsalted butter. Also added some diced roma tomatoes. Awesome !!!

    A new favorite for us, could not find the Ricota Salata, so used feta cheese. Makes a lot so is good for company. I will make this for our next pot luck at work....yummy.

    I love this recipe. I have been making it for quite awhile and have shared the recipe numerous times with grateful friends. I can't find ricotta salata so I substitute myzithra cheese and it is amazing! Thanks Giada!

    This is a great recipe. As a vegetarian I make this all the time for dinner. I do however make a few additions. I roast vegetables, red peppers, broccoli, zucchini and yellow squash, or whatever you like, and use feta instead of the ricotta salata. My family, including the carnivores love it.

    I hate sundried tomatoes, so I substituted roasted red peppers which gave the salad the chewy texture and somewhat sweet flavor that was needed. I also used mozerella cheese because I couldn't find ricotta salata, and I found that it went really well with the couscouse. The cucumbers are a great touch to this recipe!

    My new favorite dish!! Loved it!! So simple & easy to make. Although I couldn't find ricotta salata I instead used feta cheese. All the ingredients mixed so well together. It was even great the next day.
