    I love this recipe. It has so many possibilities, I added in some artichoke hearts and black olives and it is delicious. I also substituted feta cheese for the ricotta salata cheese...Toasting the couscous takes a little bit of time but it is worth it.

    Made this for dinner tonight and I really liked it. Very different than anything I am used to eating and I enjoyed it a lot. To my surprise my husband did as well. He is not a couscous fan but he did like this. It was very simple to make and I will make it again. After eating it I have many ideas for variations that I think we will enjoy. It has given me many great ideas!!
