I served this as a first course to a wonderful outdoor dinner and it was perfect to get things going. It is extremely refreshing. It takes a bit of time to seed and liquify the cucumbers. I mixed everything except the alchohol and then gave the guests the choice of gin or vodka. I will definitely serve this again during the summer.

I had an abundance of cucumbers in my garden and was looking for a way to use them. This recipe did the trick! It was cool and refreshing. I used vodka instead of gin and put it the freezer unti we were ready to drink it. I took it to an End of Summer Party and it was a hit.
