    Tastes great, I have made this twice once as written and then using beef and soba noodles both times this dish turned out great. I add extra ginger and garlic.

    Fantastic. Easy, full of flavor. I added a grated carrot (where the 2/3 of scallion went in as well as more chicken stock at the end to let the noodles soak it up. Will repeat this.

    This a favorite meal in out house. I did the suggestion that Alton Brown tweeted by increasing the sambal paste and adding broccoli to the dish. Pure genius addition Alton!

    Love this recipe! I've made it once with pork and once with turkey. Both are equally delicious. If you use turkey, be sure to add a little extra oil to your pan. I also added garlic and extra chilli paste to both versions. Super tasty and easy to make.

    Nice one, Alton. Very easy, unusual, and tasty. I admit I needed some help at the Asian market to find the noodles, but it all worked out. Can't wait to do it again.

    This was Terrific and easy. The only change I made was to swap garlic chili paste for the Sambal chile paste. I will make this often. Thanks for this keeper

    OMG!!! This recipe is PHENOMENAL!!! I made the Dan Dan Noodles from this episode last week (good...and DEFINITELY worth trying, however, this was one of the best Asian dishes I've ever had. The absolute key is going to an Oriental Market and finding real mung bean noodles. No mega-mart rice sticks or anything. Also, you've got to get Shao Hsing cooking wine while you're there. It makes mirin taste like bath tub water. Find the "correct" ingredients and you ABSOLUTELY cannot go wrong. I will be making this again and again. The only thing I'd change is next time I'll use 8oz ground pork instead of the 10oz (I know, "too much meat...how can that be?".
