I made this recipe last year for VBS and the children decorated and ate as their dessert and craft. They loved it so much that they ask me to make them again this year in shape of the theme this year. I will make them in the shape of tropical fish and starfish to decorate. I've share the recipe and it has become a favorite of many. Thanks Ina.

Because of the mixed reviews of these cookies, I used King Arthur as a resource. "The mixture may seem a little dry at first; keep beating till it comes together. If it absolutely won't come together, dribble in up to 1 tablespoon of water, until it does. This is a stiff dough." As for the unsalted vs. salted butter issue, I also looked to King Arthur. "Although we usually use unsalted butter in our baking, in this case salted is preferred because, with no liquid in the recipe, it's impossible for added salt to disperse itself fully through the shortbread dough; you end up with unpleasantly gritty bits of salt in each bite." So, when I made these Daisy Shortbread cookies, I didn't dribble in water, but maybe should have used a little, and I used 3/4 pound salted butter. I flavored the glaze with a few drops of Fiori di Sicilia, from King Arthur, rather than vanilla. With those changes, the cookies were a hit with all who sampled them.

I found the recipe to have too much flour to make it come together into a dough. I added an additional ingredient of half and half and it worked and came out great. I'm making it again for sure.

I make these cookies all the time. She cut 24 cookies because of the daisy cookie cutter. I always get way more cookies. I have cut in rounds and sometimes I just form a log and cut the cookies 1/4 inch thick. Either way I get at least 40 cookies. I cream the butter and sugar together first, making sure the butter is room temperature. I've never had a bad batch.

I love this recipe. I have made the daisy shortbread cookies several times and everyone loves them. I watched her show on food network and when she made the cookies she added all of the ingredients, the butter, sugar, flour, vanilla and salt at the same time and slowly mixed. till incorporated. When I printed the recipe it said to mix the butter and sugar first and then the flour. I followed the recipe and mixed the butter and sugar first and it did not turn out that good so I made them again and did like she did on TV and added all of the ingredients to my mixer at once and it turned out great. I am so glad to have this recipe. Thank you Ina, Barefoot Contessa it is now my favorite and have made several times. Thank you again..

Yes, the cookies are very good, however butter is expensive. I don't think making 24 cookies with 3 sticks of butter is worth it. I love Ira's recipes and watch her daily. I have been baking and cooking for years but really, 3 sticks of butter = 24 cookies. I don't think so!
