    I made these for my mom's birthday. She wanted a baked potato but didn't want to eat something too filling; these fit the bill. They were so good. So good in fact, that we stuffed ourselves and it was a fight to get the last one.

    LOVED THE Recipe Paula...I changed the recipe to sweet potato ... steamed with apples...everyone raved and still was able to zip their pants.

    Soooooooooo Yummmmy. Thanks Paula. I made them for a party and every one loved them. No leftovers. I used big potatoes, one for each person (easy to carve. It's a keeper.

    FANTASTIC - As another reviewer stated, make sure you've got some extra time on your hands because coring all those little bity potatoes took some doing, but worth every minute. The didn't last long at my party last night.

    NOTE: I had some extra stuffing which I made into patties and fried for breakfast the next morning...amazing. I've just invented my own next dish!

    These were awesome. Basically a tiny version of twice baked potatoes. Although if you plan on making these make sure you have some extra time on your hands. To save time i crushed the garlic and sautee'd it in a little of the left over bacon fat. Yum!
    I've also tried this recipe with a few changes. Instead of regular bacon i used pancetta, and in place of monterey jack and cheddar i used fresh grated parmesan and shredded mozzarella. They are really rich that way and trust me its good. These would be perfect as a party snack or a side dish for a meal.
