Off da chain, Bobby! Hubby caught fresh mahi mahi and this was absolutely delicious!! Room temp was exactly on. Cured perfectly, mango avacado salsa perfect topping. Cannot be happier!
Served with simple pasta with fresh tomatoes and basil.....wouldn't change a thing! Thanks!

Everyone loved it! I changed the fish out to halibut steak cut filets. I also used Old Bay seasoning instead of cumin and added fresh diced pineapple to the topping.

Absolutely fantastic! Restaurant quality meal and very simple to make. I served with simmered black beans (can of beans, diced tomatoes and onions, cumin, garlic, and a bit of fresh oregano and it was a complete meal! You could easily serve this in tacos, too.

Really refreshing and tasty, and perfect for a hot summer day. Everyone in the family loved this, even my daughter who normally doesn't like fish. I made recipe exactly, but I would try adding a jalapeno to the mango-avocado salsa next time. This is definitely going into the 'keeper' file!

Excellent blending of flavors. Paired with the "coconut rice with peas" from Guy, we had a little tropical vacation at home.

My husband loves fish so I tried something new. I used cod instead of the mahi mahi. Tasted great and not fishy. We made them into tacos and the family loved them.
