WHEY: You can re-cook the whey to make ricotta cheese. Bring it back to a gentle boil, 200 F, then turn it off and let it cool to 140 F. Stir it occasionally to drive the solids to the bottom. Strain through cheesecloth or a very fine sieve, such as a reusable coffee filter.
After two cheese-makings, the whey can be used to feed animals, water the garden, or as soup stock.

I read others reviews, I have been excited to try this. Here is my dilema. Never have used cheese cloth before, bought at grocery store. first question, can you get anywhere else? was a little spendy. when i went to pour into double layer of cheese cloth, the top layer floated up and messed it all up. what did i do wrong? I almost cried. i still think it looks amamzing so i am still giving it 5 stars. i just need a little help

That little ole cheesemaker....ME! I will make this once a week to keep on hand. I ate it like feta on a salad, and with honey and walnuts; can't wait to try it in other recipes. Both of my daughters have made it and love it too. Hmmm, what to do with the whey - any suggestions Aarti?

Sooo much fun and easy!! We seared some of the paneer and served it with slices of home-grown tomatoes and basil. With a sprinkle of salt and a squeeze of lemon, it was delicious! Love the versatility of this dish. Thanks again, Aarti!

As a PhD chemist I believe this is basically a science experiment and EXTREMELY successful. Aarti is personable, approachable and her recipes work. I've used it a couple of times and if you follow the recipe you can't go wrong, and I agree with previous reviewer you can use the whey especially if you season it up as something else. But even if not, eat this paneer in a delicious meal and enjoy. Thanks, Aarti!

I loved this and our family has made it twice since the show aired (actually we made it three times if you count the fact that we made a double batch the second time! Super easy, tasty and fun with my 7 year old. Another reviewer mentioned a blog which recommended "what to do with the whey" but I had a bit of a hard time following the post. Any other suggestions for what to do, rather than pouring down the sink?

Dead simple, really good. My husband saw this on the show and made it the very next day. We are addicted! SO much better than the frozen pre packaged stuff.

I couldn't believe just how easy this was! I was afraid that it waa going to taste very lemony, but it really didn't taste that lemony at all.
