Sauce is very tasty but wasn't that impressed with it over th potato. I had it the next day over fettucini noodles and it was delicious! Will definitely make this again but will serve over pasta instead!

I used what I had in the kitchen. I also cut the recipe in 1/2 . I switched regular potatoes for sweet potatoes, because I wanted some extra vitamins = I also made the following substitutions because this is what I had on hand to work with: mild chicken sasuage instead of turkey, 2 tbs of heavy cream instead of mascarpone cheese, and spinach. It was really good! The sweet potato blended nicely with the marinara and salty cheese.However, I would not use chicken sausage ever again, it was my 1st time using it and it had a rubbery texture, but tried it because it was all my market had in stock. I would love to try the original recipe , but may just substitute whipped lite cream cheese, instead of mascarpone. Overall, it's a fantastic comfort recipe, simple to ingredients, and easy to change up!
Lastly, I would love suggestions to make this meal a little more on the low fat side? Any suggestions ?

I watched this episode and immediately put it on my menu for the week. This is my favorite Giada recipe that I've made!! My only substitution was using cream cheese instead of mascarpone. (but shh, don't tell my husband - he thinks he hates cream cheese! HUGE HIT! Thanks Giada!

I was running out of quick weeknight dinner ideas, so I decided to try this. I wasn't sure if I would like the combo of tomato, sausage, and potato though. I made it exactly as is, and only substituted spinach for arugula. It was so easy and delicious! Definitely would classify this as comfort food. I will be pulling this out whenever we need a quick and delicious dinner. Cooking only for two, I have enough left over for another meal. I think I'll try putting the leftover sauce over pasta.

Just made this tonight for dinner! Recipe was very easy to follow, ingredients were simple. I am not big on sausage in a sauce. But it really is delicious! I used baby spinach instead of arugula and I couldn't find mascapone cheese, so I substituted cream cheese. Very creamy and would be great over pasta! Thanks Giada! A+++ =

I made this for my dad, husband and 2.5 year old son. They all loved it! It was yummy and filling. Makes easy leftovers too. We used spinach and microwaved the potatoes to save our house from heating for an hour. Will definitely make it again!

An average meal, I'm usually in love with all of Giada's recipes but this one was a bit limp... I didn't like the arugula cooked through, perhaps just put it on top instead of wilting it in with the sauce? Probably won't make it again - I prefer chili con carne on top of baked potatoes, much tastier.

Great, easy, and amazingly good! I made this and took it over to a girlfriend's house for dinner one night. Our kids played and we ate this with salad and some wine. My husband enhaled his portion at home and took the leftovers to work the next day. My potatoes also were not done in an hour. I just put them in the microwave. I also used spicy turkey italian sausage links. Would suggest a pinch more of crushed red pepper. I also used less mascarpone than called for to cut down on the fat. This receipe, and probably the overall concept, will be part of my weekday menus.
