    Good recipe. Added red chili flakes too. Definitely squeeze some lemon juice before serving. I used regular polenta as I couldn't find instant polenta. I cooked the polenta for 10 min before adding to the soup and cooking for an addnl 35 mins.

    I love this recipe. I think that the 1 TBSP of salt has to be a typo; start with a teaspoon and then add more to taste. The soup is great as-is, but I have found that this is also very flexible to use as a base recipe - I add other veggies that I have (mushrooms, red bell peppers, etc, beans, sausage (often the pre-cooked kind that I can just slice and warm up in the soup at the end. I often use plain cornmeal instead of quick cooking polenta, becuase I hate buying things I won't use elsewhere, and it works just fine, but needs to simmer a bit longer.

    WOW Giada, another ingredible dish, made this for dinner tonight and I have to admit its The favors meld together beautifully, but I wouuld cut down on the salt alittle. This has become a new favorite in my recipe boxs... Thanks you again!!!!

    I searched for a vegetable recipe and was attracted to this one because it is so rustic and having recently watched a documentary on Italian cooking and the popularity of polenta with meals I had to try it. It was so much better than I had expected, only after seating to eat it with my daughter did I realise that I had totally forgotten to include the onions, but still tasted great. I did read the previous reviews, and as I do not cook with salt I found the chicken stock more than sufficient as a salt substitute, and a good few shakes of black pepper, but as I knew that I wanted a kick I included 3 green chillies with the carrots, but you could easily add more for even more spice, I took them out prior to serving. I don't like parsley at the best of times but combined with thyme makes it a tasty combination. I love the colours and texture....simply Delicious especially for these winter nights.

    WOW! I should have read the "salt" reviews first. Also, I love pepper, but it was also way too much.
    I love the idea of this soup, so may try it again, but maybe add 1/2 tsp. salt and pepper next time. Inedible!

    I read a lot of reviews before making this and decided to do it! I think the flavor is enough after adding all the fresh thyme and parsley but honestly the salt is really overpowering.....seriously 1 tablespoon???? I have to wonder if this wasn't a typo because honestly it's just way too much. I can't believe the recipe calls for more salt and pepper to taste at the end as well....yikes! I will probably try the recipe again at a later date with 1 - 2 tsp. salt.

    This soup was so yummy and filling. I made it to take with me to work for lunch. The only change I made was I used cornmeal instead of instant polenta because I couldn't find instant polenta at any of the three grocery stores I checked in my area. It cooked it a little longer than the recipe called for and it turned out great. I'll definitely make this again.

    This soup was good, not great.

    Like someone else said, I felt like it was missing something. I made it the day after Christmas and everyone in the family liked it, but I felt like it needed something to kick it up a notch. Maybe some Italian seasoning or more spices than just thyme and parsley. I would have added pepper flakes, but someone in the family can't have pepper. Otherwise, that might have helped kick up the flavor a little. I also didn't add a tablespoon of salt. Yikes. We did add chicken to the soup also, but still felt like something was missing.

    Will probably make this again at some point and try to add more spices, etc.

    This soup was Amazing!! We gobbled up the whole pot! Loved the texture the polenta gave it! I did add some sweet sausage and topped it with some parmesan cheese!

    I just made this recipe tonight and it turned out amazing, absolutely in love with this soup!
    As another reviewer said, it exceeded my expectations. My husband, neighbor and I all enjoyed this yummy recipe. I added chicken to mine and I'm so glad I did, definitely recommend if you want some protein in there. We grocery shopped rather late today, so to save time I just bought the rotisserie chicken from our grocery store which worked great. I cooked my veges so they were tender. I couldn't find instant polenta, but I bought the kind that comes already cooked in a roll. Just chopped it, added some water and heated in the microwave, then mashed it up and added into the soup. It was perfect! Can't wait to make this again!
