    These are delicious. Not too sweet, nice airy cake, beautiful lemon tang. For the person commenting about bitterness I promise you zested into the pith (white under the skin of citrus which, even in minute amounts, can ruin a dish with bitterness. Fresh lemons will always provide the best flavor over bottled juices as well. Enjoy.

    These cupcakes are super delicious, I made them for my mothers Birthday and she loved loved loved them, they are a bit more involved than the normal easy cupcakes i have been making, but i figured for my mother I would make the best, i went with an intermediate level and scored big! My husband and kids loved them as well.

    These cupcakes are AMAZING!!! My friend made them for me for my birthday because I love coconut and lemon and these did not disappoint! They are seriously the best cupcakes I have ever had. Make them now!

    Made these cupcakes last night and finished assembling them today. The cupcakes raised more then I expected and spilled over - truly fill the cupcakes 3/4 if not a half full to bake. The lemon curd was awesome I was very careful zesting the lemon to ensure I didn't get any of the white pith. I placed the curd in the fridge overnight and the flavor was much better the next morning. Icing was again amazing, but was barely enough to cover the cupcakes, if you like a lot of icing make a double batch. I will definitely make these again.

    Just Curious Murry0815 when you grated the lemon zest did you make sure not to get any of the white pith? That can make it very bitter if you did. I've made a recipe very simliar to this and it was great. You might try cutting back on the amount of lemon juice used as well.

    The curd was HORRIBLE! WAY BITTER! I did everything it said and it was nasty. I thought after I got the cakes assembled that the buttercream and cake would help the bitterness and nastiness but I was wrong. I spent a lot of time and effort on these and now I have to throw them away. Will not make again. The only positive that I can say about this is that the buttercream and the cakes were good....BUT the cakes were really flimsy...Didn't hold up well.
