Very good, the lemon juice and zest give it an extra pop of flavor! I will make this again for sure!

I already had a buttermilk pancake recipe that I loved, but wanted to give this a try just to see.
Well, they ended up being good pancakes, but not awesome like my buttermilk ones. They were not as fluffy and were slightly under-sweet. She does mention that you can sub. the evap. milk for buttermilk and I would recommend that right off the bat to anyone trying these for the first time. So to sum it up, these were good, but didn't knock our socks off!
Note: I ate the leftover pancakes for desert tonight, with the addition of homemade sweetened creme fraiche, and I really enjoyed them this way.

These are a new family favorite. We all love how light these pancakes are in comparison to the normal dense pancake. I did add more than a cup of blueberries and also stirred the mix each time before placing ~1/4c of mix on the griddle. If I didn't stir, the blueberries settle to the bottom (prob b/c mixture is so light. Another alternative would be to add the blueberries directly onto the pancake batter as soon as placed on the griddle.

Awesome! Didn't have evaporated milk- lactose intolerant- so used lactose-free milk. Fluffy fluffy fluffy. Heaven!

I have never made pancakes before... always ate the frozen pancakes which you microwave. This recipe seemed easy, so decided to give it a try. Even though I made some substitutions, it turned out so good!! I used all purpose flour instead of cake flour, and used 1 cup of 2% milk instead of evaporated milk. The pancakes were DELICIOUS!! Will definitely be making this again and again! Thanks Ree, for turning me into a fresh pancake maker!

I normally don't like blueberries in pancakes, but these are so light in texture and flavor I really liked them. The rest of the family liked them too. I only needed 1 can of evaporated milk--they were plenty thin.

I am not a fan of pancakes or the boxed mixes. I tried this for my kids and we all absolutely loved them!!! The aroma and flavor are so refreshing , with a nice balance of tang and fruityness and just enough sweetness to wake you up. They have become perfect for summer breakfast and will continue through winter also.
