    one major thing that helps w/texture and final product relative to crispiness is to NOT peel the potatoes as the recipe states...who knows if this is what she actually did on the show this is from as often times I find variations with these printed recipes on food network from what the chefs actually did as well as quantities of ingredients, etc...another thing that helps as another viewer referenced is to pre-heat the pan prior to placing potatoes on it to cook as well as finishing for 5 minutes or so in the end under broiler portion of oven...another things that helps w/texture is to not have them on the long side, cutting them to where they are shorter, say 2-3" helps tremdously w/final texture.

    I have baked it this morning. It's so yummy and crispy. This is the second time I baked it. The first time is not crispy but delicous. I sprinkle two sides of the sweet potato with sugar, and let it completely cool down. It was so good and crispy. I am so happy to share that I have baked it successfully.

    Awesome recipe. I added a dash of cayenne pepper and got the spiciestroasted sweet potatoes ever! Will make again and again. I also cubed the sweet potatoes and served them with roast pork. mmmmm

    After reading the reviews, I decided to stay dice the potatoes into cubes before baking them rather than cutting then lengthwise into fries and may I say it payed off. The potatoes were amazing. All the other recipes in which I made have either come out too slimmy or too dry. This is definately a recipe in which I plan on making alot in the future.

    The taste was ok, but they were more like wilted sweet potatoes than " fries". No crispiness to be found anywhere!! Next time I will try pre heating the baking sheet. That seems to give a head start to the roasting process.

    I think over all this was a very good recipe. Biggest problem is that Ina said they would be crispy and as most reviews as well as mine lacked crispyness. I am not sure they can be more crispy but this may have to do with the type of potatoe. Wnen I watch this episdoe the potatoe she held did not look like the sweet potatoe I know. Most sweet potatoes have a tan to yellowish skin and the insides are a bit golden in color. On tv Ina's sweet potatoes looked more like yams. So...I purchased and made my recipe with yams. They where very good but not crispy and I am sure a regular sweet potatoe woulld be worse only because I believe they have a higher water content.

    I might try to cut them thinner, use much less oil in a higher temp oven. In addition I would not add the sugar/salt seasoning til the end.. Adding the sugar later would alow you to bake at a higher temp since the sugar will burn.

    I'll try this and when I do I will post my results.

    Love this recipe! I'm making this again for a side with steak tonight. My husband and I agree that they are delicious and easy to make. Thank you Ina!

    I have made these several times & they are always perfect. Going in the oven right now to accompany our baby back ribs that are smoking away in the smoker! Can't wait.

    Entirely tasty and a good healthier choice. They give enough of that French fry satisfaction. They were not crispy but still very good. I had a couple sweets and a couple baking potatoes so I made some of both and they both worked well.
