I really enjoyed this but my son had trouble getting his teeth into it so I started making minis with the more bite sized rice snacks and 1 tablespoon of fatfree topping. about 25 calories each and they come in chocolate too!

I am always a bit skeptical of Hungry Girl recipes, but was craving something sweet and saw this on TV today. I took light Cool Whip straight from the freezer, scooped some on a plate, sprinkled cinnamon on it, and tried it. YUM. I then cut up an apple and used that as a dip and ate the rest. Such a tasty light treat. The frozen Cool Whip tastes like a light whipped ice cream - not sure why I never tried this before! Thanks for the great snack idea inspired by this recipe!

I tried them with Dreyer's light Caramel ice cream with has 110 cal for 1/2 cup so 55 for 1/4 cup and oh my GOD it was great...that much ice cream goes a long way because it's so rich...
I tried as the original recipe as well and I love it too. But as the Hungry GIRL says play with the recipes to make new ones

These were AWESOME!!! Tastes just like real ice cream!! I also made them with the small caramel flavored rice cakes for bite sized treats and piped on the whipped cream with a pastry bag... TASTY!!!!

This is fantastic! I added some cut up apples for more of a caramel apple flare along with giving it a little added fiber! I did cut my rice cake in half and still used the 1/4 cup FF whipped cream. It made it a taller and creamier tasting sandwich. I highly recommend this recipe!

mmmm! TOTALLY, totally addictive!! I am not usually a fan of rice cakes, so was skeptical about this recipe, but it made a fan out of me.!!
It tasted like a healthy version of a rice krispie treat. Yum. Except the quantity was so much more. Bigger bang for the calorie buck.
I made a bunch of these in advance and kept them in the freezer. As the days went by, while they were still very yummy, the rice cakes definitely began to lose their nice firm texture. Next time, I think I will just make a fresh one each time I decide to have it.
Really enjoyed this. Will make it again in the future.
5 stars. With extra points coming from its simpicity, guilt free-ness and tastiness.

Best dessert ever!! A large package of caramel rice cakes and 1 tub of whipped topping made 7 perfect sandwiches, plus a little left over for some finger licking : I just put them into individual freezer baggies so anytime I have a sweet craving I just open the freezer door and get ready for some frozen goodness. A must try for sure!! (try roasted saigon cinnamon from mccormick! it smells like a bag of red hots and is soo good in this recipe

really delicious! I 1/4 c of whipped topping just not enough, but that's ok, you can always add more. The cinnamon in the whipped topping was really good. will make these alot!

Yummy, yummy, yummy!!!!! Reminds me of a Little Debbie's Oatmeal pie just a healthier choice. Really simple to make, quick, economically priced and a nice frozen sweet treat for dessert or snack. I could not find the large Caramel Rice cakes so I bought the mini's which are more fun to eat. Gotta try it!!!
