This is my second time making the mole'. I am using chicken quarters but keeping the chicken whole and serving it with rice and tortillas. The sauce is outstanding! I am also using New Mexico chilies. You have to be careful to check the spice. The adobo chilies also add a zip. I try to limit those to one or two. I also didn't have the almond butter like I did the first time but it tastes just as well with peanut butter. This is one I will keep in family. I truly laugh whenever I watch the show. We are happy to have someone represent the Midwest!

This was the first recipe I tried of the Sandwich Kings, it was awesome, a little time consuming to make considering it was a sandwich, but it was totally worth the time, the mole was awesome! I am so glad I tried it!

I have never been interested in making a mole as thought it was too complicated and time consuming. Not so with this recipe. Made it for company (sister and her husband and everyone really enjoyed the flavors with just the right amount of heat. The fresh salsa verde was outstanding and easy enough that I won't be happy with the jarred version again.

I have to say I actually like this mole better that Rick Bayless's mole at Frontera Grill in Chicago, and I'm a huge Rick Bayless fan. Yummy Jeff! (sorry Rick

Easy and Delicious! We put the chicken mole mixture into tortillas with Salsa Verde, Cacique Mexican Cheese and Pico de Gallo for toppings. My husband said this Mole recipie is a keeper!
Serve up with a Grapefruite Margarita and you have the perfect fiesta!

I use a rotisserie chicken to save time. I also double the salsa verde recipe and combine the second half of it with homemade chicken stock for enchilada sauce (add a couple of serrano chiles for heat. This mole is fantastic! My husband and two year old daughter licked their plates! We also like dipping chips in any left over salsa verde sauce. What an amazing combination of flavors! I'm excited for the new season of Sandwich King!
