This meatloaf is very different! Don't expect it to taste like a cobb salad. I used 3 pieces of bacon on top, which was perfect. My package of bacon held 18 slices and 8 slices of bacon would have been too much on top of the meatloaf. Overall the flavor was good, but make sure you use a good blue cheese because it can overpower the other flavors in the meatloaf. My kids who are ages 7 and 2 ate it and I was surprised. The spinach salad was wonderful and the shallot dressing was really good!!! I don't know if I would make the meatloaf again, but I would definitly make the salad portion.
