The sauce was excellent and very easy to make. I would like to try it with chicken breasts.

I made this recipe for my family of pheasant hunters and it was a stunning success. One of my cousins, who has been eating pheasant all his life, said it was the best pheasant he ever had. Gracia Mario.

My boyfriend hunted some pheasants last fall and I really struggled to find a recipe because Ii never cooked or ate pheasant so I wasn't certain how to prepare it. I followed the recipe to a T and we loved it.

The sauce was OK...we didn't love it, so no repeat. But, I can't believe the cooking directions--poultry breasts cooked for 16 minutes?! No way...these directions have to be wrong. We crisped the skin in a cast iron skillet for three minutes, flipped them over, and had them in the oven for only three more minutes. I don't even cook chicken breasts for sixteen minutes...won't they be overcooked?

I love Mario Batali, sorry, but this had to have been simply THE most awful recipe I have tried in my entire life. The cider vinegar is simply too much for this recipe. I don't think even a tablespoon suits to be in it! I am glad the pheasant is cooked seperately at first because when I tried this recipe I was able to at least enjoy the pheasant and that wasn't ruined. The sauce literally tastes like barf and stomach bile. I thought I did something wrong the first time I made the sauce and because I had enough to immediately try making it again, I did so. Same results - disgusting! DO NOT waste time on the sauce!

As a new wife to an avid hunter, I?ve embraced the challenge of preparing wild game (thank you food network. This is a favorite. I have to say this dish is not pretty to look at once prepared but? Your taste buds will thank you with your first bite.
