The sandwich was very good. The soup looks exactly like applesauce when complete, and the color is not that appetizing. The flavor was fine, but it was just not that exciting overall. I would not make it again.

I love this dish and I've never had celery root before! My only substitution was a combination of white wine and sparkling apple cider in place of the apple liquor that I didn't have. this was really adventurous for me but I loved it! BTW, add some extra bacon crumbled into the soup, it's a great finishing element.

If you have not used celery root before, this will make you a fan. I did not have parsnips, and I used a couple golden delicious apples I had on hand, and got fantastic results. This really does not need cream at the end if you want to skip the extra calories, though obviously it makes the soup richer. The sandwich has enough richness if you skip the cream in the soup, and the combination of flavors is fantastic.
