I don't really see the appeal to the sauce. I really was thinking there might be a typo in the online recipe, because there just seems to be way too much butter for the amount of sauce. The celery seed helps the flavor, but overall, it's just way too weak. I doubled the Frank's sauce and added a little pureed habanaro and garlic (and doubled the amount of wings for the oversupply of sauce, and it now it's good. Frankly, I've made better sauce just using a mix of 4-5 peppers of various heats, roasted garlic, and a few other spices just thrown in--and, at most, a stick of butter.

@TJK1, I realize that for most recipes, making your own sauce is preferred. I tend to think Buffalo Wings are one potential exception. If you know the history of them, you know there are a variety of origination tales. I tend to believe the ones relating to the Bellissimo's Anchor Bar. In the original recipe, it was melted butter and Frank's Red Hot sauce. Anyone is free to make their own sauce however they like it, but this one stays true to the original, and more importantly, is pretty easy. Cayenne pepper sauce is a recipe in and of itself.

I just watched the Pollard's BBQ episode, in which Robert tore up Pollard for using a doctored up store bought BBQ sauce recipe. While I like Frank's Red Hot sauce, this wing sauce recipe is doing the exact thing that Robert slammed Pollard for - doctoring up a store bought sauce that instead should be a homemade signature.

I love this recipe! I love chicken wings. I so enjoy your Restaurant Impossible show. My dream and aspirations a long time ago was to be a chef/dietician and to have a tea house style restaurant. Your recipes, ideas, techniques renovations and giving people what they need to be successful in their restaurant business satisfies that lost dream. Your construction crew and interior designers are superb. Thank you for your show and all that it offers.
