    This was yummy. I made this today. However, due to my family's preferences, I made this with chicken thighs. I used 7 thighs. My family does not care for rosemary so I used thyme. I had no spring garlic so I used 3 chopped garlic cloves instead. I didn't have baby carrots so I substituted 4 large carrots, sliced diagonally 1 1/2 inches thick. This was yummy. I used my 8 quart Le Crueset dutch oven. The recipe for the dumplings can be halved. I almost completely covered the stew and had more dumpling dough left over than I actually used and I almost threw it away but my husband suggested I bake it like biscuits so I formed the leftover dumpling dough that I couldn't fit onto the stew into 10 'large' biscuits which I baked in a 425 degree oven for 15 minutes. These were good, too! This recipe is a keeper and you can play with it and add other veggies, too. I think I would add a full cup of peas since we like peas. This is more like a 'stoup' than a stew or a soup!
