Very very yummy! I left the skin on the potatoes because i like the texture and extra nutrients, and substituted spinach just because it was all I had on hand. Mashing the potatoes required a bit of elbow grease but it was well worth. The mascarpone added a wonderful creaminess to the dish. My family loved it! Will definitely make it again!

This is now my favorite mashed potato recipe! I had never had kale until I made this. I had to use two different cheeses (winter solstice cheddar & gouda because I couldn't find mascarpone or gorgonzola, but it still came out wonderfully regardless!

Yum! Creamy & wonderful flavor. I forgot to get the marscapone so I used sour cream & it turned out great. You can also use half sweet potato & half regular white potatoes for a delicious twist.

Prepared ths recipe for our Xmas Dinner and it was great. Never had Kale before so we were surprised at how good it tasted.

This is so easy and packed with flavor. Would have never put these two together, especially since I'm not a fan of kale, but this was a hit with the family too! Everyone had seconds.

Amazing! My husband who is the traditional butter and cream mash potato guy said these are by far the best! Brought them into work and everyone loved them. Wouldn't change a thing. So Yummy!!!
