Absolutely delicious! My first roll cake and it came out perfectly--looked picture perfect! I liked the almond flavor and loved the filling, it was nice and light! Used Cherry Dr. Pepper. Would definitely make again!

Easy to make and super delicious! Being from Canada where they don't sell Cherry Coke, I used 1 3/4 c Coke and 1/4c grenadine.

Wow! Tried this as a birthday cake for an individual who loves Red Velvet Cakes. It was a hit with everyone. Had no problems with any steps. Wonderful cake texture and just the perfect sweetness to the filling. Can not understand why so many individuals had problems preparing it.

This received rave reviews from my kids and guests. It was surprisingly easy to make and I had no problems rolling it. The cherry flavor was fantastic & it looked perfect. However, I only gave it four stars because it had too much almond flavor and I'd make a lot less frosting as a ton of it squished out when I rolled it up. Easy fixes and it's been requested for a birthday cake by my 9 yr old son.

Very good flavor. Easy enough to make and assemble--just follow the directions. My filling was a little on the thin side, but nothing that ruined the appearance whatsoever.

Love the taste of the cake but icing didn't work and the cake fell apart when I re-rolled it. Made a different cream cheese icing because the cream and icing sugar did not form peeks:(

I made this yesterday, and followed directions to a T. I had no problems rolling it, as far as it breaking. I thought I did not roll it to tight, but looking at the photo, I think I did fine after all. Oh 1 think I screwed up on. I FORGOT to put the red coloring in the cake! It was already in the pan when I realized it. SO! I decide to put it in the frosting! It was so pretty after all.
Now, I will say something must be off in the frosting ingredients. WAY to much almond. Next time I will reduce the almond and increase the vanilla. So it gets a good, not a very good rating.

The flavor and color made this a wonderful Valentine's Day dessert. However, the cake itself was much too thick to roll up without breaking, both when it was warm and later when I tried to fill it with the cream cheese mixture, resulting in the ugliest dessert I've ever made! I'll try it again but I'll bake it in a jellyroll pan, one that's 15"X8" (or whatever the side measurement is. When I make a pumpkin jelly roll at Thanksgiving, I use a 15" jellyroll pan for the cake and I never have trouble with cracking or breaking.
