    This was a success for me! I used not a whole lb of hot breakfast sausage bc I didnt want it super meaty, fresh diced tomatoes instead of sundried, I roasted potatoes as well, mixed in half the potatoes & half the croutons, then arranged the rest on top. The eggs did take the longest to cook, so maybe next time I will put them in at room temp instead of cold. I prepped everything the night before & put it in the oven in the morning. It was super hearty & yummy!!

    This recipe was so amazing! I made it for the first time for brunch on Christmas day and the whole family was ooooh'ing and aaaah'ing when it came out of the oven. This dish really is beautiful. And it's so delicious. The funny thing is that I forgot to include the goat cheese and it was still amazing...no one even noticed.

    Just made this for Christmas Eve breakfast. Toasted left over french bread is garlic olive oil, used some amazing Sandy River Farms Port sausage in Virginia, cooked the onions and chopped baby spinach in butter separate from the sausage for one of my guests. I didn't have any dried tomatoes so just diced up a big beefsteak. It was a hit! Thanks!!!

    6 for a birthday brunch - Served with roasted asparagus done in the oven with the egg bake. Toasted English muffins, fresh fruit, breakfast pastries cut into quarters, butter & jam on the table. Pear upside down cake for desert. I knew my daughter and son-in-law would be coming from a long morning run so I precooked poached eggs to add and finished them just before serving. Everybody cleaned their plates. Next time, maybe roasted potatoes, 1 1/2 times everything but the toppings? Many possibilities. Thank you Giada.

    This was delicious! I did change a few things. First I used about 3 oz of sundried tomatoes, and that was perfect for us. You could really taste them, and I think 6 oz would be way too much. I also used breakfast sausage and used chard & kale in place of the spinach. I used 4 slices of wheat bread instead of bread called for, and mixed in the bread after being toasted vs just putting it on top. It helped b/c there was some moisture from the greens left over in the pan. I will definitely make this again! :

    This was excellent! I added mushrooms and used feta cheese instead of goat cheese, but didn't use the whole container as I thought it might be over powering. My husband absolutely loved it. The next time I will add the roasted potatoes.
